Sugar Free Banana Nut Muffins

3 large mashed bananas
1/3 c. vegetable oil
2 lg. eggs
1/2 c. water
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 c. chopped nuts


Beat together mashed banana, oil, eggs and water until creamy. Add flour, baking soda, baking powder and spices. Beat well. Stir in nuts. Spoon batter into oiled cupcake pan. Bake at 325 degrees for 20 minutes or until a knife inserted comes out clean. Cool completely on wire rack.

I made a peanut butter Cream to go on the first batch of muffins





And a walnut topping to go on the second batch of muffins.

  1. Sounds yummy! What is the recipe for the peanut butter icing and the nut topping?

  2. I just whipped peanut butter and a little butter and powder sugar for the peanut butter cream. it didn't turn out exactly how I envisioned but next time I will try something a little different.
    For the walnut topping I melted about 2 tbsp of butter and mixed chopped walnuts and a few tbsp of brown sugar. I put it on before I baked.
