Eggplant Linguine

I made this recipe up when I didn't have too many food items available at my house.

Have pasta ready before you saute eggplant so it is hot and ready to serve when the eggplant is done.

Prepare spaghetti the way you like it. I put pesto and olives in my tomato sauce to give it more flavor.

Cut the eggplant in slices and dip in egg then flour. Sauté in a pan with olive oil.

Pile the linguine pasta on top of the eggplant slices and add slices of zucchini.


Banana Bites

A simple and easy snack

One banana
Some raisins
Ganache: ( chocolate on top )

  • 1/2 C Cacao Powder
  • 1/2 C Agave
  • 1/4 C Coconut Butter, softened


The Scheitel Salad

I call this the Scheitel because it has quickly become the salad of choice at my house. Full of flavor and full of nutrition, how can you go wrong!

First start with you salad. I would recommend dark leafy greens, not iceberg. We usually add strawberries and seeds on ours. Sunflower seeds and pumpkin seeds.


Grilled blackened salmon is the fish of choice for us but you can us whatever fish you like. Grill it, cut it in strips, and place on top of your salad. Add salad dressing if you like. I  usually use italian or strawberry poppyseed. I would not recommend ranch or anything like that. 


Add a couple of sides if you are extra hungry. Baked cauliflower is a good one! ( Check older posts for recipe.)

Baked Cauliflower

This is one of my favorite vegetable recipes. If you don't really care for cauliflower now, you will probably love it after you bake it this way!

Ingredients:

  • One large Cauliflower
  • Olive oil
  • 1/4 tsp red pepper
  • 1/4 - 1/2 tsp garlic powder
  • salt as you like
  • pepper as you like
  • 1/2 - 1 cup of parmesan cheese


First steam cauliflower for about 15 minutes.


Place cauliflower in a baking dish and cover with olive oil. sprinkle garlic powder, red pepper powder, salt, and pepper over the whole thing.  Sprinkle with parmesan cheese. You can squeeze a little lemon juice over the whole thing. 


Bake for 15 minute or until brown and crispy on top. Bake at 425 degrees.


Serve warm and enjoy!


I covered my baking dish with aluminum foil to make clean up easier. ( optional )

RAW Zesty Lemon Balls

For a treat that has no added sugar, these sure do taste like a dessert to me!
These Lemon Balls are so easy to make. The prep time is about 10-15 minutes and the ingredient's list is very short.


Ingredients:

1 cup pitted dates, chopped
Lemon Juice - 1/4 cup
2 tsp. lemon zest
1 cup raw walnuts
1 cup sesame seeds
1/2 cup unsweetened coconut flakes

    Preparation:

    1. Place in a food processor all ingredients except coconut flakes.
    2. Pulse until completely mixed. The mixture will be a bit sticky.
    3. Dampen your hands and roll spoonfuls of the mixture into bite size balls.
    4. Drop the balls into a bowl of water. This will help the coconut stick to them better.
    5. Pack the shredded coconut onto the balls and store in the refrigerator until ready to serve.

    Toasted Tuna Sandwich

    I know this doesn't sound too appealing but it is actually really good.

    You can use whatever bread you like best, I used the 5 grain Italian bread
    2 hard boiled eggs
    about 2-3 Tbsp. of relish, or however much you like
    one can of tuna
    Mayonnaise - (optional) I did not use it in my recipe
    Cheese - (optional) I did not use it in my recipe
    Toasted -( optional) you can have your sandwich warm or cold

    This makes 2 large sandwiches

    Mix all the ingredients together and place on one slice of bread. Place cheese on top. Put in toaster oven on low or light toast. Serve with veggie chips and some fruit and you have a complete meal.

    Avocado Appetizers

    My husband and I made this appetizer up one day when we were trying to come up with some way to use avocados.

    Publix Brand 5 grain italian bread cut into 4's and lightly toasted
    Cut avocado into thin slices and place ontop
    Add a small amount to salsa and you are done
    Simple but very fancy looking and very tasty!

    Homemade Juice

    You can make juice out of lots of different fruits and vegetables. This juice has celery, carrots, and apples. 
    Pour over ice and you have a delicious and nutritious drink. 


    Sugar Free Banana Nut Muffins

    3 large mashed bananas
    1/3 c. vegetable oil
    2 lg. eggs
    1/2 c. water
    1 tsp. vanilla
    2 c. flour
    1 tsp. baking soda
    2 tsp. baking powder
    1/2 tsp. cinnamon
    1/2 tsp. nutmeg
    1 c. chopped nuts


    Beat together mashed banana, oil, eggs and water until creamy. Add flour, baking soda, baking powder and spices. Beat well. Stir in nuts. Spoon batter into oiled cupcake pan. Bake at 325 degrees for 20 minutes or until a knife inserted comes out clean. Cool completely on wire rack.

    I made a peanut butter Cream to go on the first batch of muffins





    And a walnut topping to go on the second batch of muffins.
